Mother's Day in the Algarve: a lunch to treat (and remember)
It’s not just a menu. It’s a return to the flavours that can’t be explained, only felt.
There are things that aren't in recipe books.
Nor on restaurant menus.
They are learnt in another way.
By watching.
By waiting.
By tasting slowly.
There was a generation of mothers, and grandmothers, who cooked like this.
Without exact measures. But always right.
From a little… they made a lot.
And from that lot… memories remained.
This Mother's Day is a return to that.
To the flavours that can’t be explained: they are felt.

Shredded tuna, seasoned as it was in the past: simple, fresh, direct.
Uma sea salad that opened Sunday lunches… whilst the rest was still on the stove.

Maize flour stirred slowly, without haste: as time dictated and not the clock.
The flavour comes from everything: the bacon, the cockles, the bread that wasn't from today… and the patience of those who stayed there, stirring, until it was right.
It is a dish from another era. And you feel it in every spoonful.

Egg thread treat and ancient sweetness, made to last through time.
Because there are desserts that do not need to be reinvented, only respected.
